Day 2 - Not horrible, but not awesome...

Last night's misadventure in "lasagna", well, was a misadventure.

If you'll recall from yesterday's post, I had a crockpot full of this waiting for me when I got home: Paleo Crock Pot Lasagna 

My house SMELLED Like it had lasagna in it, but what we ate was just a bowl of mildly-Italian slop. The instructions will indicate that you have to ladle out the excess liquid, of which there is a lot. As in a saucepan full. I was on a time crunch to get to derby practice, so I put the liquid in the saucepan, and simmered it while we ate.
I found it to be super bland. I think I would add some chicken broth next time, or at the very least more salt. And more Italian seasoning, as again, it was bland. I also feel like there could be more "cheese sauce", so if I made this again, I think I would double that part.
This dish left me WAY less gassy than the cabbage (duh), and where I'm not as excited about leftovers for lunch today as I would be if I were having, say, a cheeseburger and fries, I'm fully confident that today's leftover lunch will satisfy me until dinner tonight.

Also, EXERCISE! Now, it wasn't a hard work out, but it was my first time back on skates in about 2 months last night. It felt GREAT! I'm breaking in a new pair of awesome skates that hubs got me for Xmas, so that was an added challenge. But it was great to get moving, break a slight sweat, and of course, spend time with m'ladies. Post-derby practice always leaves me cranky and starving, but when I got home, I drank a big glass of water, and had a handful of shelled pecans (my fave), and that was able to hold me until this morning. So add one to the "didn't junk binge before bed" column. Let's hope I can make that a good habit.

Not calling it a "win" yet, as you know how things go, but I am down a few pounds on the scale. I hadn't weighed since last Thursday, and I'm down 4 pounds from then, which included pizza, and some beers, but also a really good and healthy Mexican Chicken Soup. There's leftovers of soup, so I may end up having it for lunch this week, in which case I'll share the recipe. It's not 100% Candida-Safe, so I'll include adjustments.

What's up for today you ask? This is the game-plan:

Day 2  Menu:

Breakfast: Scrambled eggs with Spinach and Garlic (again). Yeah, breath stinking, but whatevz.

Lunch: Leftover Crock Pot Lasagna. I'll probably add some salt

Snacks: Cukes and Celery (yawn face). Why'd I have to forget the guac?!

Dinner - What I'm MOST excited about Easy Paleo Chicken Curry
     You'll omit the mushrooms to be candida-safe (and hubs has decided he hates them. But I love them Mmmmm). We'll eat over Quinoa, which is not as delicious as white rice, quite possibly one of my favorite foods on earth, but it's a marathon, so I'll be back on those white starches in NO time if I can keep it up!


I've brought all the proper equipment to stop at the gym after work, too. So barring anything nuts happening, I have a goal to get on the treadmill and do 3 miles. That seems like a reasonable goal! Baby steps!
