So, I technically started last night. This misadventure of trying to get my guts back on track. I've developed some unsavory habits lately, most troublesome being my late night snacking. For some reason, just before bedtime, my brain says, "GO NUTS! Have it all!". And any successes I had throughout the day are wiped away.
While not a "resolution", I'm making a conscious effort to be mindful of the shit I put in my mouth. (phrasing). I read up on yeast overgrowth, which appears to be super common, yet wildly underdiagnosed, and wondered if that's not what I'm dealing with, with my "hive hands".
To catch you up, in case you don't know me, for about 3 years now, I've been on a regimen of Allegra every morning and Zyrtec every night, to keep my hands and feet from swelling up and getting itchy and bumpy. I've weaned off the Allegra, but if I miss my nightly dose of Zyrtec, I wake up with my hands a fire, and have two days of super sensitivity, and not being able to put on my rings.
So, I did some research, and with some input from a friend of mine, am taking a stab at the Candida diet. My friend, who deals with candida outbreaks in herself and her family, suggested a couple of supplements, which I've started on, and together, we've been researching the Candida diet, the Whole 30, and I've added in researching Paleo, as they all seem to share overlap. I've found most Whole 30 and Paleo diets can be amended to leave out Candida-feeding foods. In my true lazy-OCD fashion (if you know me, it makes sense), I printed recipes and made an organized binder. Then yesterday, decided I didn't want any of the things in my binder, and did more research and more printing. Again, this makes sense if you know me, IRL.
Today, Monday, is day 1. Or I guess, day 1 1/2 - I made Candida-Safe Stuffed Cabbage Leaves for dinner last night so I could have leftovers today for lunch.
Now, know this background: My husband's grandfather was Slovak, so we have HIS recipe for stuffed cabbage leaves, and know, these are not the same as those Halupki. At all. In fact, hubs said, "The person who wrote this recipe obviously doesn't know how to make them". So, as with all "diets", we will have to make some adjustments for taste.
This is the recipe I used:
Whole30 Paleo Cabbage Rolls
If I decide to make these recipe again, these are the adjustments I will make:
- Boil the cabbage longer than 2 minutes - I think like 5 should work. You want the inner leaves to get cooked, too. I had to put the inner part of the cabbage in the micro to get them to steam. Not ideal.
- Cut the thick spine out of the cabbage leaves before stuffing them. Pro-tip from my hubs, the expert.
- Use toothpicks to keep the rolls shut, if needed.
- Cover with foil before baking - my leaves got a little charred. They should be more "steamed" than broiled.
- You should only need about 1 1/2 hours to bake them. They were done at the 1 1/2 hour mark, even though the recipe said 2 hours.
We ate them over mashed Rutabagas, which were easy-peasy, but not at all mashed potatoes.
The above being said, they were okay. Okay enough that I will eat them for lunch again today.
Now for the TMI portion of my post: Whenever I'm gassy overnight, I dream that I'm either pregnant or having my period. That must be from the intestinal cramping from gas. When I awoke this morning full of gas, I thought, "HOW CAN IT BE?! We had a 'safe' dinner last night, and I had safe snacks (pecans and sunflower seeds - yawn).". Ooohhh the cabbage. Suffice it to say I might just be pulling the delicious meatballs out of the cabbage wraps this afternoon for lunch. Poot.

Breakfast: 2 scrambled eggs with Spinach and Garlic. My breath probably stinks, but I read garlic is good for fighting yeast.
Lunch: Leftover Stuffed Cabbage Rolls - Recipe above. May not eat cabbage. Have not decided.
Dinner: Paleo Crock Pot Lasagna
- Note: Do not add honey to the marinara. I added an equal amount of ACV instead and it turned out great. Will post on how it tastes tomorrow :)
